Think About Thanksgiving
- Make more gravy than you think you need.
- Make a list of what is necessary and make sure everything is in its place.
- Prepare food items in advance when appropriate.
You can never have enough gravy, so why not make it ahead of time and freeze it? Don't worry about drippings. You can always add them after your turkey roasts. You don't need a whole bird. Buy turkey parts and make your gravy as you normally would. Never made gravy? Thank goodness for both Google and YouTube ;) And, most every gravy freezes very well.
There is a French term that every good cook adheres to: mis en place...everything in its place. Check your kitchen tools and equipment well in advance. Nothing worse than the day arriving and you don't have what you need for prepping and/or serving. And, scampering around trying to figure out where you left that roasting pan or gravy boat adds stress that is avoidable.
You may make ahead and freeze your cranberry sauce, dinner rolls, pie crusts and mashed potatoes. Who knew? Nothing like a cranberry sauce made from real berries and fruit. Sooo easy and impressive. It is delicious and bears no resemblance to that "jelly" that oozes out of the can...
If you prepare in advance, you actually may be sitting at the table with your family rather than scurrying around trying to get it all together!
